Rendered Animal Fat

Trimmed animal fat from a single species. Chicken skin works, too.

Method

Melt the fat over low heat and long time in the pan. If using chicken skins, you're aiming for a nice even golden brown all over, with it only bubbling gently. Strain the solids out, and store in the fridge for years. Chicken skins are, of course, crispy and can be used to test a spice mix, if you want.
